Ingredients:
2 cups croutons
1 cup red peppers
1 cup brocolli
1 cup onion chopped
1/2 cup 2% cheese
1 1/2 cups egg substitute
1/2 cup skim milk
Directions:
1. Saute vegetables until tender. Layer croutons on bottom of pie plate. Put vegetables on top of croutons. Sprinkle chhese on top of vegetables. Mix egg substitute, milk and preferred spices, pour slowly on top of the items in the pie plate. Let stand 5-10 minutes to allow the croutons to soak up the egg mixture. Bake in a 350 degree oven for approximately 20 minutes on until middle of quiche is set. Let cool slightly before serving.
