A healthy lunch or light supper. Ingredients:
2 whole wheat pita bread |
1/3 cup hummus |
2 leaves romaine lettuce, shredded |
1 cup fresh spinach leaves, shredded |
1 medium tomato, coarsely chopped |
1/2 cup cucumber, peeled and chopped |
1/4 cup scallion, minced |
1/2 cup alfalfa sprout |
Directions:
1. Slit open the pitas. Spread the insides of each pocket with hummus. 2. Stuff each pita with half of remaining ingredients. 3. Enjoy! |
