an easy, versatile lunch that's filling but fairly low-calorie! If you pack this for lunch, pack all the ingredients separately and microwave on-site.
Ingredients:
1 large (64.0 g) pita
2 tablespoons pizza sauce
2 tablespoons green peppers, diced
2 tablespoons raw broccoli, diced
1/4 cup reduced fat mozzarella cheese, shredded
Directions:
1. spread pizza sauce on pita, sprinkle on broccoli and green pepper, then sprinkle cheese over it. Microwave on a low power until cheese is melted, or bake in oven at 475 until cheese is melted. The vegetables can obviously be substituted for whatever you want, I've used leftover grilled chicken, tomatoes, red onion and whatever else I can find.
