one of my favorites from barefoot contessa...had to post here so i could get nutritional information.. Ingredients:
2 cups chopped yellow onions |
1 tablespoon minced garlic (3 cloves) |
1/4 cup olive oil |
1 teaspoon oregano |
1 tablespoon salt |
2 teaspoons pepper |
4 cups diced carrots |
2 cups diced potatoes |
2 lbs dried split green peas |
16 cups chicken stock or 16 cups water |
Directions:
1. saute onions and garlic with olive oil, oregano, salt and pepper. add carrots, potatoes, peas and stock. bring to boil then simmer 40 mins or until peas are soft. this soup thickens as it cools. serves 10 - 12. |
