A recipe I got from my mom, always can be revised to ones liking by adding different veges ( example cooked eggplant, cooked mushrooms etc ) but I usually stick to this. looks pretty and tastes great. use as a sandwich filling, or with crackers, or a side salad. Ingredients:
1/4 cup finely ground walnuts |
2 small sweet onions finely chopped |
1, 10 oz pkg frozen green peas thawed and briefly cooked and pureed- don't use the entire package, start with half |
4 hard boiled eggs finely mashed |
salt, pepper, dash nutmeg to taste |
a bit of chopped fresh parsley to taste |
optional: vegetarian chicken flavor powdered bouillon to taste |
Directions:
1. Combine walnuts, egg and onions 2. Stir in enough pureed cooked peas as desired 3. Season to taste with salt, pepper, parsley, nutmeg and boullion to taste 4. Chill till serving 5. Serve scoops on a bed of lettuce or use as desired |
