Vegetarian Minestrone Soup |

Thick and chunky and so flavorful. It is even better when reheated, just add more water as the noodles soak it up. Ingredients:
3 tablespoons oil |
1 cup diced onion |
1/2 cup diced celery |
3/4 cup diced carrot |
1 teaspoon crushed garlic |
1 cup cubed eggplants or 1 cup cubed zucchini |
1 cup chopped tomato |
2 teaspoons salt |
1/4 teaspoon pepper |
1 teaspoon oregano |
1 teaspoon basil |
1/4 cup parsley flakes |
2 cups tomato sauce |
4 cups water or 4 cups stock |
1/4 cup white wine |
1/2 cup ditalini |
Directions:
1. Heat oil and sauté celery, onion, and carrots for 10 minutes. 2. Add remaining ingredients except pasta. 3. Simmer for 30 minutes. 4. Add pasta and simmer another 10 minutes. |
