Just plain lentil soup with no bells and whistles. It lends itself to many variations. Ingredients:
1 pound lentils, dry |
6 cups water |
1/2 cup carrots, diced |
1/2 cup celery, diced |
1 cup onions, diced |
2 tablespoons olive oil |
1 cup tomatoes, diced |
1/4 teaspoon black pepper |
1/4 teaspoon thyme |
1/4 cup parsley, fresh, minced |
1/2 teaspoon salt, table |
Directions:
1. Put all the ingredients into a soup pot. 2. Simmer for 1 hour or until the lentils are tender |
