good vegetarian staple. tastes good reheated too. Ingredients:
2 tbsp olive oil |
2 large onions |
2 garlic cloves |
2 peppers |
200 g sweetcorn |
3 tbsp tomato puree |
250 g red lentils |
2 tsp mixed herbs |
400 g chopped tomatoes |
600 ml stock |
125 g breadcrumbs |
75 g cheese |
1 large tomato |
Directions:
1. fry onion and garlic for two minutes 2. add peppers (capsicums) and fry for three minutes more 3. stir in the sweetcorn and tomato puree 4. add lentils, mixed herbs, tomatoes and stock 5. boil then simmer for 25 mins 6. pour into greased oven dish. sprinkle over cheese and breadcrumbs. slice tomato over the top. 7. bake at 190C - 200C for 15mins. |
