I've been cooking greens without meat for many years and they are delicious,yyou won't miss the meat.I add the jalapeno whole,if you like the greens spicy,chop up the pepper,seeds and all.You can serve the greens sprinkled to white vinegar if you like. Ingredients:
olive oil or canola oil |
butter |
onions,chopped |
garlic,minced |
jalapeno pepper,whole |
greens,collards,mustards,turnip tops,or any combination,well washed and cut in bite size pieces |
vegetable broth |
Directions:
1. heat oil and butter in large pot.Add onions and cook until just softened,add garlic,pepper and greens,stir well to cook in oil .Add broth to cover greens at least an inch,Cook until greens are tender. |
