I found this recipe in the local paper a few years ago and have been making it ever since. I prefer this vegetarian version over the traditional recipe which normally includes pork. It is wonderful over burritos, eggs or even plain with tortillas. Ingredients:
1/4 cup butter or 1/4 cup margarine |
1 teaspoon minced garlic |
1 tablespoon onion flakes |
1/3 cup flour |
1 (28 ounce) can diced tomatoes |
1/2 cup green chili pepper |
1/2 teaspoon salt |
1/2 teaspoon cilantro |
water |
Directions:
1. In a large sauce pan, melt butter or margarine. 2. Add garlic and onion and cook until onion is re-hydtrated. 3. Add flour and stir to make a roux. 4. Add tomatoes, green chili, salt and cilantro. 5. Add water (enough to make a nice gravy). 6. Simmer for 30 minutes. 7. This can also be made in a crock pot. |
