Vegetarian 'good Protein' Chili |

An easy-to-prepare, hearty vegetarian chili that is so decicious and full of good things! Ingredients:
1 1/2 cups black beans, rinsed |
1/4 cup cooked brown rice |
1 1/2 cups stewed tomatoes |
1/2 cup onion, in med pieces |
2 cloves garlic |
1/2 cup mild salsa (can increase heat if you like) |
1/2 teaspoon sea salt |
1 teaspoon black pepper |
Directions:
1. Put garlic and onion in blender, pulse til chunky, then add tomatoes and blend just til pureed. 2. Add blender mixture, beans, rice, seasonings and salsa to a medium pot. 3. Cook for 30-45 minutes to allow flavors to meld. 4. Serve - delicious 'as is', or top with sour cream, guacamole, grated cheese or whatever sounds great. 5. ENJOY! : ). |
