Japanese rice casserole
Ingredients:
1 cup of cooked brown rice
2 cups of sliced mushrooms
1 onion
2 cups of eggplant
100 grams of green beans
100 ml soy sauce
100 ml of white wine
2 tablespoons sugar
2 eggs
2 tsp oil
Directions:
1. Heat the oil a wok. Cook the onion for 4 mins. Add eggplant and cook 3 mins. Add beans and mushrooms and cook for 2 mins. Combine sugar, soy sauce, and wine, with .5 cup of water. Stir thru vegies and simmer for 4 mins. Beat the eggs. Remove from heat and stir thru eggs til partly cooked. Serve over the rice.
