dinner/simply delicious vegetarian Ingredients:
2 tbsp peanut oil |
1/2 tsp mustard seeds |
1/2 tsp cumin |
2 green chili peppers |
2 cloves garlic |
1 tsp ginger |
2 onions |
4 large zucchini |
2 large potatoes |
4 oz okra |
4 oz butternut squash |
1/2 tsp white pepper |
1 tbsp worcestershire sauce |
1 tsp salt |
2 tbsp soy sauce |
2 cups veg broth |
1/2 cup half and half |
1/4 cup cilantro |
1 1/2 cup brown rice |
Directions:
1. Heat oil. Add mustard and cumin seeds - 3 min. Add chilis, garlic, ginger, and onions - 5 min. 2. Stir in zucchini, potatoes, okra, butternut squash. Add white pepper, salt, worcestershire sauce, and soy sauce. Pour in stock, cover and simmer 30 min. 3. Stir in cream and simer 5 min. Garnish with cilantro and serve over rice. |
