Vegetarian Crock Pot Chili |

This vegetarian chili is yummy! I often add some boca ground crumbles and some extra chilis or jalepenos because I like it hot! It is good with cornbread or over brown rice. Ingredients:
1 cup garbanzo beans, dried |
1 cup black beans, dried |
1/2 cup kidney beans, dried |
1/2 cup onion |
1/4 cup green pepper |
1 cup corn |
2 tbsp garlic |
1 tbsp chili powder |
1 jalapeno pepper |
1/2 tsp cumin |
2 cups tomatoes, diced |
1/2 cup tomato sauce |
Directions:
1. Soak and rinse beans. 2. Add to pot with water and boil for one minute. Let sit for an hour. 3. Add softened beans to crock pot with all other ingredients. 4. Cook on high for 4 hours. Stir occasionally. 5. Reduce heat to low, and cook another 4-6 hours, stirring occasionally. |
