Tasty, fibre-rich, cold-weather food. Ingredients:
1 tablespoon vegetable oil |
2 cups chopped onions |
1/2 cup chopped yellow pepper |
1/2 cup chopped green pepper |
2 cloves garlic, minced |
2 tablespoons maple syrup or 1 tablespoon brown sugar |
1 1/2 tablespoons chili powder |
1 teaspoon ground cumin |
1 teaspoon dried oregano |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
2 (450 g) cans stewed tomatoes, undrained |
2 (450 g) cans black beans, drained and rinsed |
1 (450 g) can kidney beans, drained and rinsed |
1 (450 g) can pinto beans, drained and rinsed |
Directions:
1. Heat the oil in a Dutch oven over medium-high heat. 2. Add onion, bell peppers and garlic. 3. Saute 5 minutes or until tender. 4. Add sugar and remaining ingredients. 5. Bring to a boil. 6. Reduce heat and simmer for 30 minutes. 7. Makes 8x1-cup servings. |
