My Mum used to make me a really yummy vegetarian chilli, years ago. She no longer has the recipe, so this is my attempt to recreate it! It's in the crockpot at the moment, and I will probably have many versions of it before I'm happy, but here is version 1!!
Ingredients:
7 tomatoes
1 large onion
1 red capsicum
6 garlic cloves
5 long red chilies
1 head broccoli
1 cauliflower
2 carrots
2 zucchini
1 teaspoon ground cumin
1 teaspoon basil
1 teaspoon cayenne pepper
1 teaspoon black pepper
Directions:
1. Trim and roughly chop all ingredients.
2. Add to slow cooker and cook on high until vegetables are soft and tomatoes are bubbly!
3. - Should take around 4 hours on high.
