My Mum used to make me a really yummy vegetarian chilli, years ago. She no longer has the recipe, so this is my attempt to recreate it! It's in the crockpot at the moment, and I will probably have many versions of it before I'm happy, but here is version 1!! Ingredients:
7 tomatoes |
1 large onion |
1 red capsicum |
6 garlic cloves |
5 long red chilies |
1 head broccoli |
1 cauliflower |
2 carrots |
2 zucchini |
1 teaspoon ground cumin |
1 teaspoon basil |
1 teaspoon cayenne pepper |
1 teaspoon black pepper |
Directions:
1. Trim and roughly chop all ingredients. 2. Add to slow cooker and cook on high until vegetables are soft and tomatoes are bubbly! 3. - Should take around 4 hours on high. |
