1 (14 ounce) can chickpeas, drained |
1 (14 ounce) can cannellini beans, drained |
1 (14 ounce) can corn, drained (white corn would be nice here) |
2 (4 ounce) cans green chilies |
1 onion, chopped |
2 garlic cloves, chopped |
4 fresh jalapenos, chopped |
2 small zucchini, cubed |
1 lb button mushroom, sliced |
4 cups vegetable broth |
1 teaspoon oregano |
1 teaspoon cumin |
1/2 cup quinoa |
Directions:
1. Easy: throw everything except the quinoa into your slow cooker. Cook on low for 6-7 hours or high for 3-4 hours. 2. Add quinoa and let it cook for another hour. 3. Feel free to garnish it with fresh cilantro, lime juice, crushed tortilla chips, Tofutti sour cream, etc. |
