A hearty chili. Makes about 9 - 1 cup servings. This is mild enough for a 4 year old (assuming mild chili powder). Chili in Adobo is a good addition earlier in the process as well if you like more heat. Ingredients:
2 medium onions, medium dice |
2 green peppers, medium dice |
2 tbsp olive oil |
4 tbsp chili powder |
2 tbsp cumin |
2 tbsp oregano |
29 oz diced tomatoes |
2 tbsp garlic powder |
1 tsp cinnamon |
15 oz black beans, canned |
15 1/2 oz black eye peas, canned |
15 1/2 oz red beans, canned |
3 oz tomato paste |
12 oz dark beer |
12 oz water |
2 tsp salt (1 tbsp kosher salt) |
1/4 cup splenda |
2 tbsp cider vinegar |
Directions:
1. saute onion and pepper in oil in a large stockpot 2. add chili powder once the aromatics have browned. Cook until it sticks to the bottom of the pan a bit. 3. Add canned tomatoes, cumin oregano, garlic powder and cinnamon. Simmer for a few minutes, scraping the bottom of the pot. 4. Add beans and simmer for a few minutes. 5. Add beer and water and bring to a simmer. Simmer for 15-20 minutes. 6. Add salt, splenda and cider vinegar. Simmer for 5 minutes. 7. Taste for seasoning. Add more heat if desired. |
