A very cheap, very easy, very healthy recipe I got from a college prof years ago. Great for cooler weather Ingredients:
2 1/2 cups kidney beans, drained |
1 cup raw bulgur |
1 cup tomato juice |
4 cloves garlic, crushed |
1 1/2 cups chopped onions |
1 cup celery, chopped |
1 cup carrot, chopped |
1 cup green pepper, chopped |
2 cups chopped tomatoes |
1/2 lemon, juice of |
1 teaspoon ground cumin |
1 teaspoon basil |
1 teaspoon salt |
1 teaspoon pepper |
3 tablespoons tomato paste |
3 tablespoons red wine |
cayenne pepper |
spray pam cooking spray |
Directions:
1. Heat tomato juice to boil, add bulgur, cover, let stand 15 minutes. 2. Spray large pan with Pam, sauté onions and garlic, add carrots, celery, spices peppers, cook until tender. 3. Add beans and remaining ingredients, and heat gently at least 45 minutes, longer if you like. 4. Can be served topped with parsley, cheese, onions, sour cream. |
