This came from a recipe book by Chatelaine. Prep time doesn't include soaking the beans because I quick soak them.
Ingredients:
1 (28 ounce) can of undrained diced tomatoes
2 cups corn
2 cups dried red kidney beans, soaked
1 vegetable bouillon cube, crumbled
4 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
Directions:
1. Soak beans.
2. Add everything else to the pot and simmer until hot.
