This came from a recipe book by Chatelaine. Prep time doesn't include soaking the beans because I quick soak them. Ingredients:
1 (28 ounce) can of undrained diced tomatoes |
2 cups corn |
2 cups dried red kidney beans, soaked |
1 vegetable bouillon cube, crumbled |
4 garlic cloves, minced |
2 tablespoons chili powder |
1 teaspoon cumin |
1/2 teaspoon dried oregano |
Directions:
1. Soak beans. 2. Add everything else to the pot and simmer until hot. |
