Vegetarian Apple Stir-Fry |

It seems strange at first but try it. My family was so used to eating steak every night that they were scared to try it, but they love it. It's a nice healthy change. Ingredients:
2 granny smith apples, cored and diced |
1 cup sliced carrot |
1 cup snow peas |
1/3 cup dry roasted salted peanut |
2 tablespoons canola oil |
1 tablespoon basil |
2 cups cooked brown rice (steamed) |
soy sauce (optional) |
Directions:
1. Start steaming your brown rice ahead of time. 2. Heat canola oil in frying pan on medium heat. 3. Add carrots peanuts and basil stirring frequently for 5 minutes. 4. Add snow peas and cook for another 5 minutes stirring frequently. 5. Add apples and stir. 6. Top rice with mixture. 7. Add soy sauce if you prefer (I don't but my boyfriend does). |
