Vegetarian Dish
Ingredients:
1/3 cup soy protein (veggie ground round)
2 cups water
1 tablespoon garlic, minced
2 medium potatoes, diced
2 tablespoons olive oil
1/4 cup tofu (tofu dogs)
1 small onion, diced
1 bell pepper, red
1 medium tomatoes, diced
1 salt to taste
1 pepper to taste
Directions:
1. Heat through veggie ground round; set aside. Sauté garlic in oil until brown.
2. Add onions and tomatoes until tender. Add veggie ground round and water.
3. Let simmer for 5 minutes. Add potatoes and cook until done.
4. Add tofu dogs and red bell pepper.
5. Season and cook for 3 more minutes.
