A recipe for 2. Ingredients:
2 teaspoons olive oil |
1 cup onion, sliced |
1/2 cup red pepper, sliced |
1/2 cup green pepper, sliced |
1 small garlic clove, minced |
1 medium tomato, diced |
3 eggs |
1 tablespoon milk |
1/8 teaspoon salt |
1/8 teaspoon pepper |
1 ounce boiled ham, diced |
Directions:
1. In a 9- inch non-stick skillet heat oil; add onions, peppers, and garlic and cook over high heat, stirring frequently, until tender-crisp about 2 minutes. 2. Add tomato and cook, stirring occasionally, until heated through, about 1 minute. 3. Transfer to a serving platter; set aside and keep warm. 4. Using a fork, in a small mixing bowl combine eggs, milk, salt, and pepper and beat until well combined; stir in ham. 5. To same skillet add egg mixture and cook over medium-high heat, stirring frequently, until eggs are set, 3 to 4 minutes. 6. To serve, spoon egg mixture over vegetable mixture. |
