Vegetable-Stuffed Potatoes

Baked Potatoes stuffed with onions and Broccoli.
Ingredients:
12 ounce baking potatoes
1/2 cup nonfat plain yogurt
2 tablespoons chopped onion
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup cooked broccoli
1 tablespoon chopped pimientos
Directions:
1. Heat oven to 375.
2. Prick potatoes with fork.
3. Bake until tender, about 1 hour, Cool slightly.
4. Cut potatoes lengthwise into halves and scoop out inside leaving thin shell.
5. Mash potatoes until no lumps remain.
6. Beat yogurt, onion, salt, pepper until light and fluffy.
7. Stir in broccoli and pimientos.
