Vegetable Stuffed Mushrooms |

This recipe is from the Company's Coming - Vegetables cookbook. Ingredients:
12 medium mixed mushrooms |
1/4 cup margarine |
12 mushroom stems, chopped |
3/4 cup onion, finely chopped |
3/4 cup carrot, finely grated |
2 tablespoons celery, finely chopped |
1/4 teaspoon seasoning salt |
Directions:
1. Gently twist stems out of mushroom caps. 2. Melt butter in frying pan. Add remaining ingredients. Saute until vegetables are softened. Remove from heat. 3. Stuff mushroom caps. Arrange on broilling pan. Broil until sizzling hot. Makes 12. |
