Vegetable Stuffed Artichokes

These are incredible. Great taste. This is good as a vegetable dish or as an elegant appetizer. Enjoy
Ingredients:
1 cup seasoned bread crumbs
3 tablespoons finely chopped onion
3 tablespoons minced green bell pepper
2 small cloves garlic minced
2 tablespoons olive oil
1 teaspoon dried oregano crushed
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons water
3 medium globe artichokes stemmed trimmed and washed
Directions:
1. In medium bowl combine crumbs, onion, pepper, garlic, oil, oregano, salt, pepper and water.
2. Pull leaves of artichokes down and fill each leaf with 1 teaspoon stuffing.
3. Place artichokes in saucepan then pour 1 water and bring to boil.
4. Cover and simmer 50 minutes basting often and adding additional water if needed.
