this is my own stock that I use as base in everything. Its well worth the time to make a lot. I freeze in ice cube trays and then drop a cube or 2 into my soups or recipes that require stock. I usually quadruple this one! Read more !
Ingredients:
1 chopped onion
2tbsp oil
dash white pepper
dash cayenne pepper
dash black pepper
1/2 tsp salt
1 chopped carrot
2 cups entire celery stalk(more leaves the better!)
cold water to cover
Directions:
1. saute onion in oil until beginning to brown
2. place all ingredients in stockpot and cover with water
3. bring to a boil, reduce heat and simmer partially covered 11/2 hrs or until veggies are extremely tender(mushy even ;)
4. Strain and chill or put into ice trays
5. Dont forget to label like I always do!
