A very simple dish but changes with the seasons depending on what is available for raw vegetables. Ingredients:
3 tablespoons chopped garlic |
2 tablespoons olive oil |
5 cups raw vegetables, cut into strips or small pieces - i use a mixture for color and flavour |
1/2 cup soy sauce |
1 tablespoon balsamic vinegar |
2 tablespoons honey |
2 teaspoons sesame oil |
2 tablespoons cornstarch |
cooked rice or soba noodles |
Directions:
1. In a large non-stick frying pan or wok, heat olive oil and add garlic. 2. Cook 2-3 minutes then add raw vegetables. 3. Stir fry vegetables until tender-crisp. 4. Add soy sauce, vinegar and honey, stirring to coat vegetables. 5. Drizzle sesame oil over vegetables and stir just before the end of cooking. 6. Mix cornstarch with a little water and stir in to thicken sauce to cling to vegetables. 7. Serve over hot rice or noodles. |
