I found this recipe in with some new cookware. Ingredients:
1 tablespoon grated ginger |
1 tablespoon chopped garlic |
2 tablespoons low sodium teriyaki sauce |
1/2 cup vegetable stock |
1 tablespoon thai sweet chili sauce |
1 tablespoon sesame oil |
1/2 red pepper, thinly sliced |
1/2 yellow peppers or 1/2 orange bell pepper, thinly sliced |
3 spring onions, thinly sliced (keep green part separate) |
1 cup snow pea pods |
1/2 cup edamame |
1/2 cup slivered almonds or 1/2 cup cashews |
2 heads baby bok choy, cut in half |
Directions:
1. In a small bowl, whisk together the first 5 ingredients. 2. Heat oil in a frying pan until hot. Add the peppers, onions, snow peas, edamame, and nuts. Cook for 3 minutes, stirring frequently. 3. Add the sauce from the bowl and the bok choy. Cook, stirring, until it thickens. 4. Serve immediately. |
