Vegetable Stacks With Tomato Coulis |

I have peppers, zucchini, summer squash, mushrooms, onion, and tomatoes from the garden or friends gardens. You need food rings and you can make these treats. Ingredients:
tomatoes-make a coulis (pureed tomatoes;cooked slightly to remove some moisture |
onions |
zucchini |
summer squash |
peppers any color |
olive oil |
sea salt |
fresh grated pepper |
herbs of your choice |
balsamic vinegar |
sprouts |

Directions:
1. Slice the vegetables to approx. size of the food ring 2. Toss them in olive oil 3. Spread out on a sheet pan 4. Salt and Pepper and add any spices you like 5. Bake the vegetables in a 400* oven until the vegetables become pliable 6. Layer the vegetable is the rings 7. Place on a sheet pan and bake until tender about 5-8 minutes 8. Place tomato sauce on a serving plate and unmold the vegetable stacks 9. If you can't find the vegetable molds you can insert a skewer through the center to keep the shape. 10. Sprinkle with balsamic vinegar 11. Top with sprouts and/or your favorite grated cheese 12. Var. In between the layers I add Feta and oil-cured Greek olives and egg plant and pour a cucumber sour cream sauce over the top. 13. Be creative !! Support you local farms. |
