Vegetable Soup with Sweet Basil |

Ingredients:
2 leeks- white part only |
1 large potatoe |
1 small onion |
2 stalks celery |
1 medium zucchini |
2 medium carrots |
6 tablespoon(s) olive oil |
3 tablespoon(s) water |
1/2 gallon(s) chicken broth |
6 ripe tomatoes |
2 teaspoon(s) minced garlic |
30 fresh basil leaves |
salt |
pepper |
Directions:
1. Dice leeks, potatoes, onion, celery, zucchini, and carrots into 1/4 inch pieces. In a 6 qt. stock pot, combine 3 T olive oil, with water. Add veggies and saute over medium heat until water evaporates. Do not brown veggies. Add stock and bring to a boil. Cook at a gentle boil for 30 minutes. Meanwhile in blender, place tomatoes, basil, garlic and 3 T water. Pulse until pureed. 2. Stir puree into cooked soup. Do not boil. Season with salt and pepper. Serve hot. |
