Modified from Vegan Cooking for One. Ingredients:
1 small onion |
1 garlic clove |
1 tablespoon olive oil |
1 1/3 cups vegetable broth |
1 bay leaf |
salt & pepper |
1 zucchini |
1 carrot |
1 cup mushroom |
Directions:
1. Chop onion and crush garlic. Saute in oil in saucepan for 2-3 minutes. 2. Add the water, bay leaf and seasoning. Bring to boil, lower heat, cover pan and simmer for about 10 minutes. 3. In the meantime, chop veggies finely. Add to saucepan and raise heat until it's fully boiling again. Then lower heat, cover pan and simmer for 10 more minutes. Serve with bread. |
