A healthy vegetable soup that is great to freeze.
Ingredients:
3 onions, diced
3 (3 3/4 ounce) packets onion soup mix
2 zucchini, diced
5 celery ribs, chopped
4 tablespoons butter
28 ounces canned chicken broth
frozen shredded hash browns (1 package)
frozen corn (1 package)
1 small head of cabbage, chopped
frozen mixed vegetables (1 package)
70 ounces stewed tomatoes (5 cans)
2 cups shredded cheddar cheese
Directions:
1. Brown and saute onions, onion soup mix, zucchini, celery, and butter.
2. Add chicken broth.
3. Add hash browns, frozen corn, cabbage, frozen vegetables, and stewed tomatoes.
4. Cook until cabbage is tender and frozen vegetables are heated through.
5. Serve with shredded cheddar cheese.
