This one is easy to make as it is done in a slow cooker. It is both hearty and filling. Ingredients:
3 (14 1/2 ounce) cans diced tomatoes, undrained |
2 (14 1/2 ounce) cans beef broth |
1 (10 ounce) package frozen whole kernel corn |
1 (10 ounce) package frozen baby lima beans |
2 medium baking potatoes, peeled and diced |
1 large onion, chopped |
2 carrots, sliced |
3 celery ribs, sliced |
1/4 teaspoon salt |
1/2 teaspoon pepper |
1 teaspoon dried basil |
1/2 teaspoon dried thyme |
2 bay leaves |
Directions:
1. Mix together all the ingredients in a 5 quart slow cooker. 2. Cover slow cooker and cook on HIGH 8-9 hours. 3. Remove bay leaves and discard; serve with warm crusty bread. |
