These eggs, peppered with their brightly colored fresh vegetables go perfectly with sausage or bacon, English muffins and fruit. They are just right for a special Sunday brunch. Recipe from TOH. Ingredients:
4 eggs |
1/4 cup milk |
1/2 cup chopped green pepper |
1/4 cup sliced green onion |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon butter |
1 small tomato, chopped and seeded |
Directions:
1. In a small bowl, beat eggs and milk. Add green pepper, onions, salt and pepper. 2. In a small skillet, melt butter. Add egg mixture. Cook and stir over medium heat until eggs are nearly set. Add the tomato; cook and stir until heated through and eggs are completely set. |
