It may take a little practice to put together Samosas that look as good as the ones found in restaurants but this recipe is nice and easy - and very authentic. Ingredients:

3 tbsp butter (or ghee) |
1 c flour (all-purpose) |
1/2 c chick pea flour |
1/2 c plain yogurt |
filling |
6 cooked, diced potatoes |
1/2 c green peas |
1 onion |
1 tsp coriander |
1 tbsp lemon juice |
1 tbsp butter |
1 tsp garam masala |
1/2 tsp chili powder |
1/4 tsp turmeric |
Directions:
1. Rub butter into flours until mixture resembles breadcrumbs. 2. Gradually add yogurt and knead into smooth dough. 3. Leave in cool place 20-25 mins. 4. Chop onion and soften in remaining butter. 5. Add all other filling ingredients and cook gently until mixture is a little dry. 6. Let cool. 7. Roll out dough very thinly and cut into 2 squares. 8. Put 1-2 tbsp in centre of dough square and moisten edges with water. 9. Fold into triangles. 10. Deep fry until golden. |
