Really good. Can be made with broccoli instead of the cauliflower, but I preferred the cauliflower. HEALTHY! Ingredients:
1 head cauliflower (chopped) |
2 carrots (peeled, grated) |
1 green pepper (chopped) |
1 bunch radish (sliced thin) |
2 tomatoes (chopped) |
1 small garlic clove (minced) |
1 cup mayonnaise |
1/4 cup ketchup |
2 teaspoons worcestershire sauce |
salt & fresh ground pepper (to taste) |
baby spinach (as needed) |
Directions:
1. Combine the cauliflower, carrots, green pepper, radishes, tomatoes, garlic, mayonnaise, ketchup, Worcestershire and salt and pepper. 2. Cover. Chill 2 hours. 3. Serve on spinach. |
