Ingredients:
1 tablespoon(s) extra virgin olive oil |
1 jar sliced mushrooms |
1 teaspoon(s) minced garlic (2 cloves) |
1 red bell pepper |
8 ounce(s) rotini pasta |
1 yellow squash sliced |
1 zucchini sliced |
Directions:
1. Cook pasta according to package directions (al dente). 2. While pasta water boils, slice vegetables, and cut red pepper into large chunks. 3. While pasta cooks, heat oil in saute pan. Add vegetables, mushrooms and garlic. Saute for 4-5 minutes, or just until tender. Drain pasta and toss with vegetables. |
