Long grain rice cooked in veggie stock with onion, garlic, carrots, red pepper and green onion. Simple and yummy! Ingredients:
1 tablespoon olive oil |
1/2 cup onion, chopped |
1 -2 garlic clove, minced |
1 cup carrot, chopped |
1/4 teaspoon pepper |
salt, to taste |
1 cup long-grain rice |
2 cups vegetable stock |
1 sweet red pepper, chopped |
2 green onions, thinly sliced |
Directions:
1. Heat oil over medium heat; Saute onion, garlic and carrots, until softened. 2. Season with salt and pepper. 3. Add rice; cook, stirring, for 1 minute. 4. Add in stock and red pepper; bring to boil. Reduce heat to low; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. (Depends on which rice you use) 5. Remove from heat. Stir in green onions; cover and let sit for 5 minutes. |
