Made it one night because it sounded good Ingredients:
1 1/2 cups brown rice (cooked) |
16 ounces egg beaters egg substitute |
3/4 cup fat-free evaporated milk |
1 cup shredded low-fat cheese |
3/4 cup chopped onion |
3/4 cup chopped red bell pepper |
1/2 cup chopped spinach |
1 chopped tomato |
3/4 cup chopped broccoli |
Directions:
1. Mix 2 tablespoons of Egg Beaters with rice. 2. Spread brown rice along the pie pan as crust. 3. Bake for 5 minutes. 4. Combine all ingredients and add to crust. 5. Bake for 40 minutes. |
