Low-fat vegetable quiche can be made ahead and frozen. Other vegetables can be added or substituted for the spinach. Ingredients:
10 ounce frozen chopped spinach |
3/4 cup egg substitute |
3/4 cup low-fat cheese, shredded |
1/4 cup onions, diced |
1/4 cup green bell peppers, diced |
Directions:
1. Mircrowave spinach for 2 1/2 minutes on high. Drain. Add remaining ingredients. Spray with cooking spray either 12 foil cupcake cups. Divide mixture evenly into cups and bake 350 for 20 minutes or until a knife inserted in the center comes out clean. An 8 x 8 baking pan may also be used. 2. Quiche cups can be frozen and reheated in the microwave. |
