to be cooked in a slow cooker/crock pot Ingredients:
12 c water |
1 t butter |
4 c beef broth |
1 lb potato |
8 oz carrot |
1/2 c frozen peas |
1/4 c split peas |
1/4 c barley |
1/4 c orzo |
1/4 c white rice |
10 oz red onion |
1/4 c corn |
1/2 c red lentils |
1/2 c navy beans |
1 t garlic |
1 t pepper |
2 t kosher salt |
1 t chopped basil |
1 t chopped oregano |
1 t chopped thyme |
1/2 t brown sugar |
1 t parmesan cheese |
Directions:
1. peel and chop potatoes, carrots, onions to 1/4 and combine with all other ingredients in a crock pot. Cook on high for at least 6 hours, stirring every couple of hours. 2. Adjust seasoning to taste and add more water if necessary to get a nice soupy broth. |
