to be cooked in a slow cooker/crock pot
Ingredients:
12 c water
1 t butter
4 c beef broth
1 lb potato
8 oz carrot
1/2 c frozen peas
1/4 c split peas
1/4 c barley
1/4 c orzo
1/4 c white rice
10 oz red onion
1/4 c corn
1/2 c red lentils
1/2 c navy beans
1 t garlic
1 t pepper
2 t kosher salt
1 t chopped basil
1 t chopped oregano
1 t chopped thyme
1/2 t brown sugar
1 t parmesan cheese
Directions:
1. peel and chop potatoes, carrots, onions to 1/4 and combine with all other ingredients in a crock pot. Cook on high for at least 6 hours, stirring every couple of hours.
2. Adjust seasoning to taste and add more water if necessary to get a nice soupy broth.
