From Chef Express. This has great color and texture. Ingredients:
1 onion, chopped |
1 garlic clove |
2 cups long grain brown rice |
1 stalk celery |
4 ounces green beans |
4 ounces zucchini, chopped |
4 ounces broccoli florets |
1 green pepper |
2 tablespoons currants |
7 tablespoons light soy sauce or 7 tablespoons tamari |
1 pint boiling water |
1 bay leaf |
Directions:
1. Use non stick spray. 2. Cook onion, add garlic and rice and cook for 2 minutes. 3. Add vegetables, currants, bay leaf and water. 4. Bring to a boil, then simmer covered for 30 minutes or until rice is cooked. 5. Add soy sauce and cook covered for 5 minutes. remove bay leaf and serve. |
