Came up with this when I needed to use up some veggies in the fridge...The combination of veggies can be switched up to suit your taste Ingredients:
1-10 oz. pkg. frozen chopped spinach, thawed and drained |
1 1/2 cups zucchini, shredded |
1/2 cup carrot, shredded |
1 medium potato, shredded |
1/4 cup onion, finely chopped |
1/4 cup flour |
1/4 tsp. nutmeg |
salt and pepper to taste |
1 egg, beaten |
oil |
butter |
Directions:
1. In mixing bowl, combine all ingredients except egg 2. Mix in egg until combined 3. Cook in 1/2 butter, 1/2 oil until golden brown on both sides |
