Vegetable Medley Nacho Platter

From my kitchen. A healthier take on nachos. Filled with lots of veggies, meat and cheese. We eat this as a main course sometimes, it's got it all!!
Ingredients:
1 bag of multigrain corn chips
1/2 lb of lean ground beef, cooked
14 grape tomatoes,cut in half
1/2 small onion, chopped
1 medium carrot, grated
4 asparagus spears
1/2 red bell pepper, chopped
1 tsp minced garlic
1 1/2 cups of grated cheddar cheese, divided
2 tsp low sodium taco seasoning
1/2 tbsp canola oil
1 tsp dried parsley
pinch of salt and pepper
Directions:
1. Preheat oven to 350° F
2. Cook beef in skillet until cooked through (approx. 7 min)
3. Drain liquid and mix in taco seasoning, put in a bowl and set aside
4. In the same skillet, add the oil, carrot, asparagus,pepper,onion and garlic
5. Cook on med/high heat for around 3 minutes
6. Line cookie sheet with foil and parchment paper (for easy clean up)
7. Spread corn chips on sheet
8. Sprinkle half of the cheese on top
9. Spread meat and veggies (except the tomatoes) on top
10. Sprinkle the rest of the cheese on top
11. place tomatoes and parsley on top of the cheese
12. Bake in the oven for 10 minutes (until cheese has melted)
