Vegetable Meatloaf Ingredients:
1/2 pound ground beef |
1 slice whole wheat bread, torn into small pieces |
1 egg, beaten |
1/4 cups shredded carrot |
2 tbsp onion, finely chopped |
2 tbsp green pepper, finely chopped |
2 tbsp celery, finely chopped |
1/2 tsp salt |
1 dash pepper |
1 dash garlic powder |
5 tbsp tomato paste, divided |
Directions:
1. In a bowl, combine: ground beef, bread, egg, carrot, onion, green pepper, celery, seasonings & 2 tbsp ketchup. 2. Form into a loaf in an ungreased loaf pan. 3. Spoon remaining ketchup over loaf. 4. Bake, uncovered, at 350 F for 45 to 50 minutes or untl meat is no longer pink. |
