Vegetable Meatloaf
Ingredients:
1/2 pound ground beef
1 slice whole wheat bread, torn into small pieces
1 egg, beaten
1/4 cups shredded carrot
2 tbsp onion, finely chopped
2 tbsp green pepper, finely chopped
2 tbsp celery, finely chopped
1/2 tsp salt
1 dash pepper
1 dash garlic powder
5 tbsp tomato paste, divided
Directions:
1. In a bowl, combine: ground beef, bread, egg, carrot, onion, green pepper, celery, seasonings & 2 tbsp ketchup.
2. Form into a loaf in an ungreased loaf pan.
3. Spoon remaining ketchup over loaf.
4. Bake, uncovered, at 350 F for 45 to 50 minutes or untl meat is no longer pink.
