Vegetable Linguine With Blue Cheese |

This recipe uses lots of fresh vegetables and makes its own blue cheese sauce. Easy, delicious, and still good for you! Ingredients:
1 lb linguine, cooked |
1 cup roma tomato, diced |
1/2 cup zucchini, diced |
1/2 cup summer squash, diced |
1/4 cup yellow bell pepper, diced |
1/4 cup red bell pepper, diced |
1 garlic clove, minced |
1/2 tablespoon garlic salt |
1/2 tablespoon dried basil |
1 tablespoon dried parsley |
1/4 cup blue cheese, crumbled |
1/4 cup red wine vinegar |
Directions:
1. Start pasta boiling. 2. Meanwhile, mix all remaining ingredients in a bowl. 3. When past is done, mix in with the veggie/cheese mixture. 4. Place in an oven safe casserole dish. 5. Bake at 325°F for 30 minutes. |
