1 eggplant |
1 yellow squash |
2 cloves garlic |
1 red onion |
1/2 head cauliflower |
16 ounces fat free cottage cheese |
2 ounces reduced fat mozzarella cheese |
1/2 cup parmesan cheese |
1 tblsp pepper |
1 tblsp basil |
2 cups green beans |
3/4 cup marinara sauce |
2 small tomatos |
Directions:
1. slice vegetables length wise 2. crush garlic 3. toss veggies lightly with pepper, basil and crushed garlic. (except tomatos) 4. let sit for 15 minutes 5. mix cottage cheese and parm cheese 6. layer veggies, cottage/parm mix, mozz and slice tomatoes in an oven safe dish 7. bake 350 f for 90 minutes 8. let stand for 15 minutes before serving |
