This recipe came from an old cookbook I was look it. Ingredients:
1 1/2 cups white rice |
2 tablespoons vegetable oil |
1/3 medium onion, sliced |
1/3 cup coarsely chopped potato |
1/2 cup chopped cauliflower |
1/3 cup sliced carrot |
1/2 teaspoon salt |
1/2 teaspoon ground pepper |
1/2 cup frozen peas |
2 teaspoons chopped fresh basil |
2 teaspoons chopped fresh parsley |
Directions:
1. In a bowl combine rice and 3 cups of water, set aside. 2. In a large saucepan heat oil over medium heat. Add onion, potato, cauliflower, carrots, salt and pepper. Cook and stir 1 to 2 minutes. 3. Add peas, cook and stir 1 minute. Add rice water mixture. Bring to boiling, reduce heat. Cover and simmer 10 to 15 minutes. Remove from heat, let stand 5 minutes. Top with fresh basil and parsley. |
