Makes a nice change at dinner time. Ingredients:
1/2 cup all-purpose flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 egg |
1/4 cup milk |
2 tablespoons oil |
1 cup of grated carrot |
1/2 cup grated zucchini |
2 green onions, sliced |
Directions:
1. Combine flour, baking powder, slat, and pepper. In a separate bowl, beat together the egg, milk, carrot, zucchini and green onion. Stir the wet ingredients into the dry until just combined. 2. Heat 1 tablespoon of oil in a skillet. Pour the batter by tablespoons into the hot oil. Cook until golden, about 2 minutes on each side. Add the remaining oil to the skillet as needed. Drain on paper towel. |
